Want a gourmet beginning to your day? Try this Grillies sandwich, packed with truffle mayo, fried bacon, Grillies slices and mushrooms. It’ll make for a true breakfast of champions.
2 Thick Slices of whole-wheat grain bread
0.25 cMixed Greens
2 TbspHoney vinaigrette sauce
2 ozGreek style strained yogurt (Truffle Mayo)
2 ozLight Mayonnaise (Truffle Mayo)
1 Tbspwhite wine vinegar (Truffle Mayo)
1 TspTruffle oil (Truffle Mayo)
3 Tsphoney (Truffle Mayo)
Salt & Pepper to taste (Truffle Mayo)
1 ozhoney (For the honey vinaigrette)
1 Tspwhite wine vinegar (For the honey vinaigrette)
1 Tbspolive oil (For the honey vinaigrette)

3 ozButton mushrooms (For the mushrooms)
1 Tspolive oil (For the mushrooms)
1 TbspWhite wine (For the mushrooms)
0.5 Tspsugar (For the mushrooms)

Start by making the truffle mayo. Place all the ingredients in a medium bowl. Whisk until all ingredients are combined.
In a small bowl, place all the vinaigrette ingredients and whisk.
In a small frying pan, heat the oil and gently fry the mushrooms. Add the white wine and stir till the alcohol evaporates. Add sugar, salt and pepper to taste and simmer on medium heat for about 5 minutes.
Meanwhile, heat a medium non-stick pan and fry the bacon for 2-3 minutes each side. Add the Grillies to the pan and fry together for a further 2-3 minutes until the cheese is golden and the bacon crisp.
Meanwhile, spread each bread slice with the truffle mayo and top with the fried Grillies, bacon, mushrooms and salad greens. Sprinkle with vinaigrette and serve immediately
