Grillies Watermelon Salad with Mint


This fresh salad is a perfect dish for dining al fresco in the summer. It's light, healthy, and easy to throw together in just minutes.

  • 1 Juice of lemon

  • 8.8 ozGrillies (sliced)

  • 4 ozFlesh Watermelon (chopped)

  • 1 cof fresh mint leaves

  • 1 Tbspolive oil (plus 1 tablespoon extra to drizzle)

  • 1 TspSalt

  • 0.5 Tsppepper

  • 4 warmed, small pitta breads to serve

  1. Heat your grill until it's piping hot. Reduce to medium heat and grill cheese slices until charred strips form on both sides.

  2. Toss watermelon and mint together with lemon juice and olive oil. Season and serve in a bowl with the Grillies slices. Drizzle more oil if desired, and serve with warm pita bread.
