Grillies Herb Muffins


With a 20-minute bake time, these muffins are the perfect addition to your Sunday brunch.

  • 0.5 csunflower oil

  • 0.75 cwhole milk

  • 2 eggs

  • 4 TbspFresh Cream

  • 1.5 Tspall purpose flour

  • 2 Tspbaking powder

  • 1 TspSalt

  • 0.5 Tsppepper

  • 1 Tspdried mint

  • 1 Tspdried oregano

  • 4 ozGrillies (coarsely grated)

  1. Preheat oven to 350°F and grease a muffin tray.

  2. Whisk the sunflower oil, milk, eggs and cream in a medium bowl. Beat until well combined.

  3. Add the flour, baking powder, salt, pepper, mint and oregano. Continue beating until all the ingredients are mixed. Fold in the Grillies using a spoon.

  4. Spoon mixture into muffin molds, ensuring a little more than half the mold is full. Bake for about 25 minutes or until the muffins rise and turn golden. Serve warm.
