Difficulty: Easy
  • 2 large free-range eggs

  • 1 Tspsea salt

  • 0.25 Tspfreshly ground black pepper

  • 0.5 ozbutter

  • 1 Tbspolive oil

  • 2 sprigs of fresh basil

  • 8 cherry tomatoes

  • 4 ozGrillies (grated)

  1. Crack the eggs into a mixing bowl with the salt and pepper. Beat well with a fork.

  2. Pick the leaves off the basil and roughly tear them. Cut the cherry tomatoes in half and add to a medium-hot frying pan with the butter and the olive oil. Fry on a high heat and toss around for about 1 minute, then turn the heat down to medium and sprinkle over the basil leaves. Add your eggs and move the pan around to spread them out evenly. When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle the Grillies over it. Using a spatula, ease around the edges of the omelette. When it starts to turn golden brown underneath, remove the pan from the heat, slide the omelette onto a plate and fold.

  3. Serve with extra grated Grillies and freshly ground black pepper.
