Grillies and Veggie Kebabs


Barbecues can be fun for vegetarians, too! Marinated and roasted fresh veggies pair perfectly with charred Grillies cubes to provide a healthy, all-natural grilling option.

  • 12 ozGrillies (diced)

  • 0.5 Medium, Green Pepper

  • 0.5 Medium, Red Onion

  • 6 Button mushrooms

  • 1 TbspDry thyme (Marinade)

  • 1 TbspDry oregano (Marinade)

  • 1 TbspFresh rosemary, chopped (Marinade)

  • 1 TbspFresh mint (Marinade)

  • 0.25 colive oil (Marinade)

  • 1 Tbspgrated lemon rind (Marinade)

  • Salt & Pepper to taste (Marinade)

  1. Chop the pepper and onion into even-sized pieces, about the size of the Grillies cubes.

  2. Whisk the marinated ingredients in a small bowl.

  3. Pour the marinade over the Grillies cheese, onion, pepper and mushrooms and mix very thoroughly. Cover and let sit for one hour.

  4. Alternate skewering the Grillies cubes with the vegetables — 4 skewers in all.

  5. Place the kebabs over hot coals or even a hot griddle pan, turning frequently until lightly brown at the edges – about 10 minutes. Brush on any leftover marinade as you turn them.
