Grillies and Olive Focaccia


This is an incredibly easy focaccia recipe that's infused with an extra kick of fresh olives. Serve with a green salad and sop up the extra dressing with its fluffy goodness.

  • 3 call-purpose flour

  • 0.25 ozsachet yeast

  • 1 Tspsea salt

  • 1 Tspdried oregano

  • For the dough

  • 1 Tbspsugar

  • 1 cwarm water

  • 1 Tbspmilk solids

  • 1.5 Tbspolive oil

  • 6 ozGrillies (chopped in cubes)

  • 2 ozGrillies (coarsely grated)

  • 1 ozblack olives (pitted and chopped)

  1. Place all the dough ingredients in the food processor and beat until the dough is just about combined.

  2. Lightly grease a large bowl and place the dough in the bowl. Cover with cling film and place it in a warm spot in the kitchen. Allow the yeast to work and make the dough rise until it doubles in volume. This will take around 40 minutes.

  3. Uncover the bowl and leave the dough to rest to remove most of the air. Knead the Grillies cubes, grated Grillies and chopped olives into the dough. Shape the dough into the lightly greased baking tray and cover again with cling film. Allow the dough to rise again for about 30 minutes.

  4. Preheat the oven to 400°F and bake the focaccia for 30-40 minutes or until golden. Allow to slightly cool and remove from the pan. Cut into squares and serve with drizzling of olive oil and extra sea salt.
