Create a light, healthy meal with Grillies slices and avocado on mint mayonnaise-infused ciabatta bread. For a fresh, crispy addition, add mixed greens on the side.
2 sli Ciabatta bread
0.5 Avocado, sliced
4 oz Grillies, cut in thick slices
Handful of mixed salad greens
2 Tbsp Vinaigrette sauce
4 oz Light Mayonnaise (Mint Mayo)
2 oz Greek style strained yogurt (Mint Mayo)
1 Tbsp white wine vinegar (Mint Mayo)
0.25 c fresh mint leaves (Mint Mayo)
1 oz honey (Mint Mayo)
1 oz honey (Vinaigrette)
1 Tsp white wine vinegar (Vinaigrette)
1 Tbsp olive oil (Vinaigrette)
Salt & Pepper to taste (Vinaigrette)
Start by making the mint mayo. Place all the ingredients in a small bowl. Liquify using a hand-held immersion blender till the mint is chopped and incorporated in the mixture.
In a small bowl, whisk the vinaigrette ingredients together.
Grill cheese slices on a hot griddle pan for 1 minute each side till slightly browned.
Toast the slices of ciabatta, spread with the mint mayo and top each toast with the avocado and Grillies slices. Sprinkle salad greens over each toast and drizzle with vinaigrette.
